Let’s make it.

Roast potatoes
Heat oven to 220°C / 200°C fan. Toss potatoes with 1 tablespoon oil and a little salt in a large roasting tray. Roast for 25 minutes, turning once.

Add salmon
Reduce oven to 200°C / 180°C fan. Make spaces for the salmon, place it skin-side down, brush with remaining oil and top with lemon slices. Season with pepper.

Cook through
Roast for 12–15 minutes, checking the thickest part is opaque, flakes readily and is steaming hot throughout. Use a thermometer for a core temperature of 75°C for 30 seconds; allow longer for thick fillets. Potatoes should be fully tender.

Finish the plate
While the salmon roasts, boil green beans for 4–6 minutes until tender to your liking. Drain and serve with salmon and potatoes; check for any remaining fish bones before eating.
