    Cook the pasta

    Heat the oven to 200°C / 180°C fan. Boil the macaroni according to its packet, stopping about 1 minute before the lower recommended time. Drain.

    Make the sauce

    Mix cornflour with 100 ml of the cold milk until smooth. Melt butter gently in a saucepan, add the remaining milk, then whisk in the cornflour mixture. Bring to a gentle bubble, whisking; cook for 2 minutes until thickened.

    Add cheese

    Take off the heat. Stir in 140 g Cheddar and the mustard. Add black pepper. Fold in the drained macaroni and transfer to an ovenproof dish.

  4. 04

    Finish

    Scatter the remaining cheese over the top. Bake for 15–20 minutes until golden and steaming hot throughout. Serve promptly while the sauce is loose.
