    Start the sauce

    Heat oil in a deep pan. Soften onion for 8 minutes. Stir in garlic and ginger for 1 minute, then cumin, coriander and turmeric for 30 seconds.

    Simmer

    Add tomatoes and coconut milk. Bring to a gentle simmer, add chicken and cook for 15–20 minutes, stirring occasionally. Clean hands, boards and utensils after handling raw chicken.

  3. 03

    Cook the rice

    Meanwhile cook the rice following its packet instructions, timing it to finish with the curry.

    Check and finish

    Check several of the largest chicken pieces reach 75°C for 30 seconds in their centres. Simmer longer if needed. Stir spinach into the curry until wilted, season and serve with the freshly cooked rice.
