Let’s make it.
- 01
Cook the sausages
Cook the sausages following their packet instructions, using the stated appliance temperature and time. Check they are cooked through; a clean thermometer should read 75°C for at least 30 seconds at the centre.

Boil the potatoes
Meanwhile, cover the potatoes with water and boil gently for 18–22 minutes until tender. Drain and mash with butter and milk. Season to taste.

Soften the onions
Heat oil in a frying pan and cook the onions over medium-low heat for 20 minutes, stirring, until soft and golden. Add the stock and simmer for 5 minutes.

Make the gravy
Mix cornflour and cold water, stir into the simmering stock and cook for 2 minutes. Season. Serve with the cooked sausages and mash.
