What you need

Equipment

  • Large frying pan
  • Two small bowls
  • Food thermometer

Let’s make it.

  1. 01

    Mix the sauce

Stir the measured pineapple juice, vinegar, ketchup, tamari and sugar together. In a separate cup mix cornflour with the cold water.

  2. 02

    Cook the chicken

Heat oil in a large frying pan over medium-high heat. Add chicken and cook for 7–9 minutes, turning. Use clean equipment after handling raw chicken.

  3. 03

    Add vegetables

Add onion and peppers and stir-fry for 5 minutes. Pour in the sauce and simmer for 5 minutes. Check the largest chicken pieces reach 75°C for 30 seconds at the centre; cook longer if necessary.

  4. 04

    Finish

Add the pineapple. Stir in the cornflour mixture and simmer for 2 minutes until glossy and thickened. Serve hot; rice can be prepared separately according to its packet.
